You can continue to hit until you either bust or decide that you’re too close to 21 to risk another card. When you decide to stop, you “stay”.

The dealer is the last to draw cards. When the dealer is finished, s/he turns over the card that’s face down (the hole card) and you compare your hand to the dealer. If you’re closer to 21 than the dealer, then you win. If the dealer is closer, then you lose. If you both have the same score, then you push and get to keep your bet, but you don’t win anything.
